The Big Bake - We have a winner!
Victoria Ashley talks us through her winning Chocolate Fudge Cake here:

I absolutely adore this Chocolate cake. I first tasted it when I was on holiday in Devon in a litter tea-room outside Oakhampton 10 years ago. I love it so much that I ask the lady who baked it for the recipe. I always made it on Sunday as a special treat for the family. It is deliciously moist, scrumptious and surprisingly easy to make.
(Serves 8)
Ingredients
3000g/ 10oz self raising flour
225g/8oz sugar
1 teaspoon baking powder
200g/7oz mayonnaise
4 tablespoon cocoa powder
250mls boiling water
Chocolate Fudge Icing
3 tablespoon cocoa
125g/ 4oz butter
3 tablespoon evaporated milk
450g/1lb icing sugar
1 tablespoon dark rum (optional)
Method
1. Line grease two 18cm/ 7inch round sandwich cake tins.
2. Mix together flour, sugar, baking powder and mayonnaise.
3. Dissolved the cocoa powder in boiling water. Stir this into the flour mixture.
4. Spoon the mixture into the prepared cake tins.
5. Bake in the centre of the oven Gas6/200C/400F for 30 to 35 minutes.
6. Remove from the oven and leave to cool.
7. For the fudge icing, bring all the ingredients to the boil a pan. Beat until smooth.
8. Sandwich the cake with half of the warm icing and spread the rest of the icing on the top and the side of the cake. Leave to cool.
